I just received 'The Art of the Two Towers' today, and there are many inspoirational sketches of the balrog when it fell into the water and became 'a creature of slime'.
Is there any possibility that this scene may appear in the extended DVD?

It would be definitly great, but there're a lots of extra sequences which are not in the movie, so I don't realy think that it will be on the extended DVD :(

But wait.... I don't think they can have that scene in there, because doesn't that happen after the Balrog falls into the water?? And don't they show Gandalf and the Balrog after that incident on the top of the Mountain when Gandalf "smote his ruin on the mountainside" ? and he didn't look slimy to me  (i could be totally wrong though......)

That's my point. It may be a new scene, at least I hope so.

If you read that passage from the book again, I believe it says that the Balrog reignites once he goes out into the open air on top of the peak. So what they showed in the movie would be perfectly in keeping with the books even if he does become a creature of slime!

Well, that's not the only thing that I have forgotten about, although I must say that the "balrog" issue was not as serious as me forgetting that I had twin sons!
